Potato Pancakes

Ingredients:

2 potatoes
1 small onion
1 egg
1/4 c. flour
1 tsp. chopped parsley
Salt and pepper, to taste

Directions:

* Wash, peel and grate potatoes finely (or mash).
Chop onion finely and combine all ingredients together.
Mix well, and drain any excess liquid.

* Spoon potato mixture into pan with hot oil and flatten into the shape of a pancake.

* Brown lightly on both sides and drain on a paper towel. Serve warm.
