OATMEAL BREAKFAST BAR

Recipe for: 10 servings

Ingredients:

1/2 cup shortening
1/2 cup dark brown sugar
3 large eggs
1 tsp vanilla extract
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 cup oatmeal
1/2 cup chopped walnuts
1/2 cup raisins (optional)

Procedure:

1. Preheat oven to 350 deg. F.
2. Mix shortening and sugar in large bowl until creamy. Add eggs and
vanilla and beat until smooth.
3. Mix flour, salt, baking powder and cinnamon in a small bowl. Stir
dry ingredients into the liquid mix.
4. Stir in oatmeal, nuts and raisins.
5. Spread in 13 x 9 inch pan
6. Bake 350 deg. F for 15-20 minutes, until crust begins to brown. DO
NOT OVERBAKE.
7. Cool completely.
8. Invert on board and cut into 10-12 squares.
9. One square makes one breakfast serving.
