Spinach Quiche with a French Onion Potato Crust

Ingredients
8 strips lean bacon, cooked and crumbled
4 large eggs
1-1/2 cups milk
1/4 tsp. dried leaf thyme
1/8 tsp. pepper
1/8 tsp. salt
1 cup shredded sharp Cheddar cheese
2 cups fresh spinach sauteed in butter
1-1/2 cups McCAINŽ FRENCH ONION ROASTERS

Instructions
1. In a medium bowl, whisk together the eggs, milk, thyme, salt and pepper, then add the cooked spinach.

2. Coat the bottom of a deep 10-inch pie pan with butter and place in the French Onion Roasters. Cover the Roasters with the egg mixture.

3. Crumble bacon over the top with the shredded Cheddar cheese. Bake at 350°F for 30 to 45 minutes, or until quiche filling is set and lightly browned.
