WHOLE WHEAT BREAD

1/4 c. molasses
1 tbsp. salt
3 tbsp. shortening or oil
1 1/2 c. milk, scalded
2 pkgs. yeast
3/4 c. water
3 c. whole wheat flour, stir flour before measuring
4 c. sifted bread flour

 

Add molasses, salt and oil to milk; cool. Soften yeast in 3/4 cup water. Combine yeast with milk, add whole wheat flour, beat thoroughly. Add bread flour to make a stiff dough. Turn onto floured board. Let set 10 minutes. Knead until smooth. Place in greased bowl and let rise 40 minutes.

Without punching down, shape into 2 loaves. Cover and let rise about 40 minutes. Bake at 375 degrees for 50 minutes. Brush top with butter and place on cooling rack away from draft.
