ELFIE'S BABY BACK RIBS:

Ingredients:

2 cups Sugar
1/4 cup Paprika
2 tsp Chili seasoning
1/2 tsp Cayenne pepper
1/2 cup Salt
2 tsp Black pepper
1 tsp Garlic powder

1 Rack Baby Back Ribs
Barbecue Rub
Apple juice in a spritzer
2 cups ***Elfie's BBQ sauce recipe follows***
Recipe makes 2 cups
2 Tbs Crisco oil
1/2 cup Onions
1 tsp Minced garlic
3/4 cup Brown sugar
1 cup Ketchup
1 Tbs Worcestershire sauce
1 1/2 tsp Mustard

Procedure:

3. Heat oil, onions, and garlic until soft.
4. Add remaining ingredients.
5. Simmer for 20 minutes.
6. store until ready to use.
7. Barbeque rub Combine all ingredients in shaker and use as Rub .
8. Peel membrane off the back of each slab.
9. Then rinse the slab off to get rid of bone dust.
10. Dry with cotton towel. Take shaker of rub and lightly coat both sides of meat.
11. Heat grill to medium heat
12. After placing ribs inside smoker, spritz with apple juice once an hour.
13. After about 2 hours, when meat is nice dark color, spritz one last time and wrap in foil.
14. Let ribs cook in foil for another 1 1/2 hours, giving you a total cook time of 3 1/2 hours. You can feel when the ribs are tender rather than rubbery (they bend rather than bounce back). Unwrap them (carefully), lift them out of juice and place on cutting board, brush on room temperature BBQ Sauce. Slice into individual ribs and serve.
