MARINATED VEGGIES

2 pt. mixed veggies
1 med. onion, diced
1 pt. Italian dressing (about)

 

Put veggies in a covered microwave-able dish. Cook in microwave on high for about 4 minutes (veggies should still be a little crisp). Drain. Add onion and then pour Italian dressing over. Dressing should just cover the vegetables. Cover and chill overnight. Tastes better the longer it marinates.
