Crumb-Stuffed Vegetables
Vegetables Stuffed with Italian Crumb Coating
Ingredients
1 package (2 3/8 oz.) Italian flavored crumb coating mixture or other flavor of your
choice
1 Tbs. margarine or butter, melted
1/3 cup sliced almonds, toasted
Scooped-out zucchini halves
Scooped-out onions
Tomato halves
Mushroom caps
Directions
Toss crumb coating mixture with melted margarine and almonds. Par-boil zucchini and onion
until nearly tender (Tomatoes and mushrooms require no pre-cooking). Fill vegetables with
the crumb mixture and place in baking pan in pre-heated 350-degree oven to heat through
and complete cooking, about 15 minutes If you prefer, simply spoon crumb mixture over hot
cooked vegetables.
Makes enough for 12 servings
