Pastrami Reuben Appetizers
1 lb. can sauerkraut
3 tablespoon thousand island dressing
1 large loaf rye bread, trim crust off
3/4 lb. thin sliced pastrami
1/3 lb. sliced swiss cheese
Drain, but do not rinse, sauerkraut and combine with Thousand
Island dressing. Place single layer of rye bread on baking sheet. Place
1 tablespoon of sauerkraut mixture in center of each slice. Top with
2 thin slices of pastrami, and 1/2 slice of swiss cheese.
Place in oven on center rack,
heat under broiler (set at 400-F) until cheese melts.
